DOC SICILIA PRODUCTION AREA: Western Sicily, hilly area north of the province of Trapani GRAPES: particular clone of pure Nero D'Avola VINEYARD ALTITUDE: 250/300 meters above sea level PLANT DENSITY: 4,000/4,500 vines/ha. PRODUCTION TECHNIQUE: harvested in crates, destemming, red vinification with punching down of the skins, maceration at controlled temperature, between 25 and 28°. Aged in steel and then for three months in the bottle. COLOUR: lively and intense ruby red. BOUQUET: characteristic of the variety, with delicate and persistent notes of red berried fruits, such as blackcurrant, blueberry and cherry. TASTE: velvety and persistent. Harmoniously elegant with fruity notes. BOTTLE: 75 cl - 13.5% Vol. Serving temperature: 16° C. PAIRING: Traditional with red meats and medium-aged cheeses. Try it with swordfish alla pantesca with olives and capers.
